Happy Thursday! Are you ready for your weekend? It’s almost here, and we have quite the busy weekend ahead of us. A trip to Pet Smart to shop for Wrigley, a wine night get together on Friday, two ugly sweater parties on Saturday, then another get together on Sunday. I typically enjoy having at least one night at home on the weekend, but this is going to be one of those ‘how is it Monday already?!‘ weekends that I’ll need to recover from.
Are you surviving your first full week back to work after the holidays? I always think it’s so hard to go back after having time off; it’s as if the week seems to take twice as long. But on the flip side it’s good to get back into a routine; at least it is for me.
For the first time in quite awhile I don’t think I hardly have anything going on this week. No dinners, going away parties, happy hours – just a boring week. BUT, I needed it. I fell off the working out wagon quite awhile ago. Literally months ago. It’s quite embarrassing. So this week was the week that I started back up. And UGH why did I stop?!
It’s Fri-YAY! And you guys…how are we already less than a week to Thanksgiving?! It’s crazy to think that we were just anticipating Halloween, and suddenly Thanksgiving is right on our heels.
Thankfully we never host Thanksgiving so I don’t have to plan, organize and cook for that, and I’m able to focus on these bowl meals and keeping on the healthy path.
I’m gonna say it. Thanksgiving is in the air. We’re officially one month away, and yes, I know what you’re thinking…”but it’s not even Halloween yet!”, and you’re right. I’m being that person. Kinda.
Halloween just isn’t my jam. I’m not really the costume type, I don’t like horror movies (as in they terrify me), and I don’t have kiddos, so other than being super excited that Hocus Pocus and a few other select Halloween shows are on TV (Harry Potter. Always Harry Potter), I just don’t get into Halloween. And let’s be honest. It’s not like I started a Turkey Day countdown in July. I think one month ahead of time is perfectly okay.
Happy Monday! I’m officially back into the swing of things here at Creative Life Explored. Before I left for vacation I had worked ahead to have recipes and posts planned while I was away, but when I returned I had nothing except for the Steak, Egg & White Gravy Breakfast Bowls, which was incredibly frustrating for me. I’m definitely a planner, and time management is important for me since I’m still working thee ol’ full time job (my crazy bank expects me to pay my mortgage, ya know?) 🙂
So last week I was lacking in the recipe post department, but fear not! I’ve spent the last 2 days cooking and photographing like craaaaaazy, so I’m back to being a little ahead of curve and have l-o-t-s of fun bowl meals comin’ your way.

I have been dreaming of baking chicken in the oven ever since my old oven died on me. I mentioned in a previous post that after 15 years we had to say goodbye to our oven, and I’m thrilled to report that we have a new one, and I feel complete!
I had been planning on making this Caprese Hasselback Chicken before my oven died – literally like 2 days beforehand. So then basically I dreamed about baking chicken for the entire two weeks that I was oven-less, and was thrilled to finally be able to do so!
