I have been dreaming of baking chicken in the oven ever since my old oven died on me. I mentioned in a previous post that after 15 years we had to say goodbye to our oven, and I’m thrilled to report that we have a new one, and I feel complete!

I had been planning on making this Caprese Hasselback Chicken before my oven died – literally like 2 days beforehand. So then basically I dreamed about baking chicken for the entire two weeks that I was oven-less, and was thrilled to finally be able to do so!

Peanut Butter & Mixed Berry FroYo Bites


I think I’ve had FroYo once. I believe it was years ago, in Los Angeles, at a mall, right before the FroYo revolution really started; at least for us here in Iowa. Now we have a couple FroYo places and I see friends post pictures of their kiddos devouring what would be a semi-healthy treat but is topped with gummy worms, sprinkles, chocolate, and other fun treats – which is completely acceptable for the kiddos. For my waistline? Not so much.

I’ve never been to the FroYo places in town because I’m pretty sure I’d have the same willpower as my friends 6 year old. My simple treat would be derailed by chunks of Butterfingers and gummy bears.

And rightfully so – they’re packed with healthy fruits and vegetables, you can customize them to your preference, add ‘super foods’ and proteins, use them to recover from workouts, and in one tasty glass you can get most of your daily intake of vegetables that you need for a healthy diet.

If I’m being honest, and those that know me know that I’m usually honest to a fault and wear my emotions very clearly on my face, I don’t drink nearly enough green smoothies. Or smoothies in general.
