Hello friends! I’m so excited to bring you this new and healthy recipe, Egg & Edamame Zucchini Noodle Bowls! I’ve just returned from vacation in Florida and The Bahamas (see Part 1 of my travels here) and am hitting the ground running with healthy new recipes that I can’t wait to share with you guys!
I’ve did it. I’ve found my “go-to” healthy dish when I’m in a crunch. This spiralized cucumber and watermelon salad is going to be my “I’m too busy to cook doing _______ and I need something quick!” dish that I make. At home, for a grill out, or even a potluck, this easy salad is full of flavor, easy on the waistline, and screams “summer is here!”
Tacos tacos tacos! (insert flashing neon sign!) But honestly, who doesn’t like tacos?! From food trucks to restaurants, oven-baked to fried, and beef to chicken to pork to fish, tacos are one of the most versatile foods in tha world. And bonus – they’re SUPER easy to make.
I have a confession. I spent about four days between last week and weekend eating like crap. Complete, total, crap. Pizza, chinese, mac and cheese, cupcakes, beer, wine – you name it, I ate it. And I paid for it. On Monday I stepped on the scale to survey the damage and had gained five pounds. FIVE!
Let’s talk about lettuce for a hot minute. Is anybody else a picky lettuce eater besides me? I love a great big, fresh salad, but so help me those salads with big white chucks of lettuce just drive me crazy.
My go-to salad has always been a really well made chicken caesar salad. On the whole, my salad eating tends to go in waves. I like salad, but I’ve never been that woman who orders it for lunch.
Cheese. It’s always been one of my most favorite ingredients, and I will be honest and tell you that I know I eat WAY too much of it.
