Happy Tuesday! Have you recovered from that crazy Superbowl?! Neither Dylan’s nor my team were in the Superbowl this year so we didn’t really have any stake in the game, but as a football fan in general that turned out to be one incredible game.
Show of hands for those of you that thinking about salads make you think about summer?! My hand definitely would have went straight up in the air – until recently that is. I always thought of a fresh salad with a glass of crisp white wine enjoyed on a patio with the sun shining. In this 20 degree winter weather I think about mashed potatoes, mac and cheese, and other various calorie-heavy comfort foods.
You guys. 34 is officially here and I’m DETERMINED to make this my year! I’ve mentioned before how I felt all over the page turning 33, and even though the beginning of 2017 wasn’t the kindest to us, I just have the most positive mindset.
Are you surviving your first full week back to work after the holidays? I always think it’s so hard to go back after having time off; it’s as if the week seems to take twice as long. But on the flip side it’s good to get back into a routine; at least it is for me.
For the first time in quite awhile I don’t think I hardly have anything going on this week. No dinners, going away parties, happy hours – just a boring week. BUT, I needed it. I fell off the working out wagon quite awhile ago. Literally months ago. It’s quite embarrassing. So this week was the week that I started back up. And UGH why did I stop?!
Have you guys noticed that blueberry recipes seem to be all the rage lately, or is it just me? Seriously, a couple weeks ago I received an email for Dark Chocolate Brownies with Blueberry Marshmallow Frosting from a food blog I subscribe to, Climbing Grier Mountain, and suddenly this salty-food craving gal needs those brownies with that blueberry frosting in her life.
What doesn’t need those brownies though is my waistline, so I decided to use get my blueberry fix by incorporating them into a fun salad.
When I was little my Dad used to cut up cucumbers and put them in this vinegar/sour cream sauce. I loved it and thought the man was a genius. I still hold my Dad in very high regard, however I now know that he was making what is a common and pretty classic recipe – Cucumber Salad.
Salads. Something I love, but tend not to eat a lot of. I’m not really sure why, but salads do not end up on my meal plan as much as I’d like them too – and I’m the one making the dang plan!
