Sometimes, you just need a great slow cooker go-to meal. Something you can throw together quickly on those busy days and have ready for you when you’re done running around and you’re ready to eat. Or hell, sometimes you just don’t feel like cooking. And that’s okay. Because that’s where an awesome slow cooker meal, like these Lemon Garlic Chicken Thighs and Red Potato Bowls come in.
Have you ever had a dish that you knew was probably easy, but for some reason you were intimated to make it? The first dish that comes to my mind that intimidates me is Shepherd’s Pie. Random fact, I’ve never actually even had shepherd’s pie. My parents never made it when I was growing up, it’s not something you can commonly order from a restaurant menu, and when I look at recipe for one I just get overwhelmed. The second dish? Chicken Pot Pie.

Another Sunday, another slow cooker recipe. It’s just SO EASY to use a slow cooker, and doing so this Sunday was fantastic because it allowed me to use the day to meal prep healthy ingredients for the upcoming week, as well as take the time to go through my kitchen; I was very lucky and received a number new saucepans, pots and skillets for Christmas, so it was a perfect opportunity for me to get rid of some tired, old things and make room for the new. So while I did all of that, my delicious dinner was cooking away, with zero hands-on maintenance.
Tis the season for slow cookers. When you’re feeling especially busy, or lazy, the slow cooker can be your best friend, and pork is one of the best things you can put into it and be creative. There are a thousand pulled pork recipes out there, and mine was one of convenience and using what I had, that turned out pretty damn good. A random Coors Light that was sitting in the fridge, lots of seasoning, some brown sugar I needed to use (because I rarely bake), and I don’t even need an excuse to use my Stubb’s BBQ Sauce.
I love mac and cheese. But then again, I’ve never met anyone who didn’t love mac and cheese. I’m sure these people exist, and if I ever meet them I’m just not sure what I’d say. Or that I’d necessarily want to be friends with them (if I’m being honest). Let’s just say I’d have lots of questions, that’s for sure. I could say I’ve been craving mac and cheese lately, but I don’t think there’s ever a time when I DON’T think mac and cheese sounds good, so I suppose you can say I’ve been extra craving it.
