Happy Monday! I hope you all had a great weekend and are feeling good about this week! Can you believe that Thanksgiving is this Thursday?! I feel like it should be next week, but nope; it’s upon us already!

We spent the weekend being for the most part, low key, which I was a-okay with. Between goodbye parties, dinners and get togethers I am socially and emotionally exhausted. I’ve consumed lots of wine, laughter and tears as I have geared up to say goodbye to my best friend who left for Portland on Friday, and a close girlfriend who is starting the next chapter of her life in Denver this week. Last week wasn’t nearly as “normal” as I had hoped, and while the holiday’s call for anything but normal this week, I feel myself sliding into a good routine. Back to normal, as they say!

These fries were inspired by a wonderful wine bar called The Wine Room in Winter Park, Florida that we ate on during our trip to Florida and The Bahamas last June.

We had gotten back from The Bahamas and had a little time to kill before we could check into our hotel, so we stopped at this place for some wine. It was fantastic; how it basically works is that you preload what looks like a credit card with however much money you want. Then you can go around to the 100’s of wines and pick your pour – 1 oz., 3 oz., 5 oz., 9 oz., etc. The bigger the pour, the more expensive it is.

I have been dying to make these tacos ever since I found them on Pinterest. This recipe is from Erin over at Well Plated, and it’s not often that I see a vegetarian recipe and think “yes, I HAVE to have that in my life”, but that’s exactly what happened.

I’ll admit I’m a bit of sucker for a recipe with corn in it, and with zucchini season coming to a close the idea that I could still get some more recipes cooked with one of my favorite vegetables definitely appealed to me.

I have some exciting news – I’m a new Brand Ambassador for the Inspiralizer! If you’ve been following my blog then you no doubt know that I love to spiralize. My history with spiralizing started a couple years ago when I stumbled upon the then new food blog, Inspiralized.

I was searching Google for “healthy pasta” in an attempt to satisfy a pasta craving I was having without wanting to feel the misery I would undoubtedly have by finishing off an entire bowl of Fettuccine Alfredo, and up popped a link to this food blog that talked about making your vegetables into noodles.
