I have been dying to make these tacos ever since I found them on Pinterest. This recipe is from Erin over at Well Plated, and it’s not often that I see a vegetarian recipe and think “yes, I HAVE to have that in my life”, but that’s exactly what happened.

I’ll admit I’m a bit of sucker for a recipe with corn in it, and with zucchini season coming to a close the idea that I could still get some more recipes cooked with one of my favorite vegetables definitely appealed to me.

I can’t believe it, but I did my first ‘meatless Monday’ last week for dinner. In hindsight, I realized I had had chicken noodle soup for lunch, so I can only say I participated for dinner, but still! I’m a complete carnivore who would have laughed hysterically if you would have asked me 5 years ago if I would be eating vegetarian for a meal.

Oh how the times have changed. I’m definitely not vegetarian and don’t think – wait, I know – I’ll never be one. But my love an appreciation of vegetarian meals has certainly increased.

I debated putting the word ‘crisps’ in the title of this recipe. I mean, who wants a crispy cookie? Most people, including myself, are all about that soft, gooey, smooshy cookie that melts in your mouth. But these my friends, aren’t ordinary cookies. You want them crispy; you need them crispy (I 100% said that in my Jack Nicholson ‘A Few Good Men’ voice by the way).
