Are you surviving your first full week back to work after the holidays? I always think it’s so hard to go back after having time off; it’s as if the week seems to take twice as long. But on the flip side it’s good to get back into a routine; at least it is for me.
For the first time in quite awhile I don’t think I hardly have anything going on this week. No dinners, going away parties, happy hours – just a boring week. BUT, I needed it. I fell off the working out wagon quite awhile ago. Literally months ago. It’s quite embarrassing. So this week was the week that I started back up. And UGH why did I stop?!
It’s always the same old story. I work out, I feel good, I make improvements, then I stop. And I make excuses, I lose my momentum, and I think WHY DID I DO THAT?!
So this week was my week back. My week that I dragged my ass out of bed at 5am and to the gym. And I know it gets easier, but man alive the first week back just sucks.
Oh, and you guys…it’s freaking December! Can you believe it?! What a ride 2016 has been.
The truth is that December will fly by and it will soon be 2017. And I love a new year! I think anyone can make a new beginning at any time they want, but there’s just something magical about having an entire clean slate in front of you to make the changes you want and be the best version of you!
But I’ll save the new year’s post talk alone or a few weeks – after all, we do have the entire month so perhaps I shouldn’t get ahead of myself.
So let’s chat about why you’re here – these Doritos Chicken Taco Salad Bowls!
Taco salad is such a great way to satisfy that taco craving without all the carbs that come from shells. Of course I’ve went and added Doritos, so if you want to avoid most of the carbs then go ahead and remove the Doritos.
The flavor from the taco-seasoned shredded chicken, salsa and sour cream is enough that you don’t even need a dressing. It keeps the salad light and fresh and saves you lots of calories.
This salad is just so easy, and if you have your chicken already cooked and shredded then you can pull this together in a pinch!

- 1 c. nacho cheese Doritos, crushed
- 2 c. chicken breast, shredded
- 1/2 packet of low-sodium taco seasoning
- 1/3 c. water
- 2 c. butter lettuce, chopped
- 1 c. frozen corn, cooked
- 1/2 c. black beans, drained and rinsed
- 1/2 avocado, chopped
- 1 large tomato, chopped
- 3/4 c. low fat Mexican cheese blend
- 1 c. salsa or pico
- 1/2 c. light sour cream
- In a medium saute pan combine the cooked chicken with water and taco seasoning. Cook over medium heat until the water is mostly evaporated.
- In a large bowl add the lettuce, corn, black beans, tomato, cheese and avocado. Stir to combine, then add the taco-flavored chicken. Stir to combine the chicken.
- Divide the salad mix between two bowls, then top with 1/2 of the Doritos on each bowl.
- Add 1/2 of the salsa and sour cream to each bowl and enjoy!
