I debated putting the word ‘crisps’ in the title of this recipe. I mean, who wants a crispy cookie? Most people, including myself, are all about that soft, gooey, smooshy cookie that melts in your mouth. But these my friends, aren’t ordinary cookies. You want them crispy; you need them crispy (I 100% said that in my Jack Nicholson ‘A Few Good Men’ voice by the way).
They’re apple slices, yo! A totally different and fun take on your traditional cookie.
As I was munching on some apples and PB I got to thinking that I’ve ate my apples in slices my entire life. I’m sure most people have. But what if you sliced your apples into rounds instead of those perfect long triangles and slathered some peanut butter on ’em? See where I’m going with this one?
I used the same Flax & Chia Seed Peanut Butter from Trader Joe’s that I used in my Peanut Butter & Mixed Berry FroYo Bites. I’m kinda obsessed and continue to be bummed that the nearest Trader Joe’s is 2 hours away, but good ol’ Amazon has me covered when I need to restock my superfoody peanut butter.
You can really customize these apple cookies how you’d like. Maybe a little Nutella instead of PB if you’re feeling extra crazy? Or granola and fresh berries for a topping! Your options are endless.

Serves 3 cookies

- 3 apples, sliced into 4 round slices per apple
- 1/2 c. peanut butter
- 1/2 c. sliced almonds
- 1/2 c. chocolate chips
- 1/2 c. raisins
- 1 tbsp. cinnamon
- Smear peanut butter onto each apple slice.
- Sprinkle the almonds, chocolate chips, and raisins evenly onto each apple slice.
- Finish by dusting the cookies with cinnamon. Enjoy!
