Happy Thursday! Are you ready for your weekend? It’s almost here, and we have quite the busy weekend ahead of us. A trip to Pet Smart to shop for Wrigley, a wine night get together on Friday, two ugly sweater parties on Saturday, then another get together on Sunday. I typically enjoy having at least one night at home on the weekend, but this is going to be one of those ‘how is it Monday already?!‘ weekends that I’ll need to recover from.

Pepper Jack Meatball Sandwich Bowls

Meatballs are seasoned with Italian seasonings, loaded with pepper jack and parmesan cheese, then topped with marinara sauce, melted mozzarella, fresh basil, then french bread slices for a deconstructed meatball sandwich.

On Tuesday I told you guys about my busy weekend and my quest to reorganize and declutter but I didn’t even scratch the surface of how productive we were. My sick fella managed to run some errands with me on Saturday after his dose of DayQuil kicked in, and our first stop out was lunch.

We went to the sandwich shop Capriotti’s. It was close to a number of the places we needed to stop, and I knew I could get something small. Well, I could eat half of the small meal. It was a late lunch, around 2pm, and I had dinner reservations at 5:45 with my mom. While we don’t typically eat that early, we were going to the theatre at 7:30 so our choices were an early dinner or super late dinner. And if I’m being honest with myself 10:45pm was going to be way too late to wait and eat. I’ve never been hangry at the theatre and didn’t intend to start this weekend. My mom and the stranger next to me didn’t need to be a part of that. So an early dinner it was!

Salmon & Rice Bowls with Tomato-Cucumber Salsa

Happy Tuesday friends! How was your weekend? Ours was b-u-s-y! Well, mine was. I have a sick fella at home so his weekend was filled with lots of DayQuil, NyQuil and couch time. I, on the other hand, went the opposite direction.

Trying to get the house updated is a lot. I feel as though I’ve been to Menards and Home Depot more times than I can count, and that’s only to update the bathroom. Which I still need to touch up the paint on but I keep putting it off because, well, it’s painting.

Doritos Chicken Taco Salad Bowls

Taco seasoned chicken is tossed with corn, black beans, tomatoes, avocado, cheese and lettuce, then topped with a sprinkling of Doritos, and finally finished with salsa and sour cream.

Are you surviving your first full week back to work after the holidays? I always think it’s so hard to go back after having time off; it’s as if the week seems to take twice as long. But on the flip side it’s good to get back into a routine; at least it is for me.

For the first time in quite awhile I don’t think I hardly have anything going on this week. No dinners, going away parties, happy hours – just a boring week. BUT, I needed it. I fell off the working out wagon quite awhile ago. Literally months ago. It’s quite embarrassing. So this week was the week that I started back up. And UGH why did I stop?!
