Sometimes, you just need a great slow cooker go-to meal. Something you can throw together quickly on those busy days and have ready for you when you’re done running around and you’re ready to eat. Or hell, sometimes you just don’t feel like cooking. And that’s okay. Because that’s where an awesome slow cooker meal, like these Lemon Garlic Chicken Thighs and Red Potato Bowls come in.
Bowl meals are already such a great way to eat a meal – they’re versatile in the kind of foods you can eat, you can double them as both a main and a side dish if you have leftovers, you have less dishes, and you’ll find yourself eating less because that need to fill your plate goes away with a smaller bowl. And when you make a slow cooker dish a bowl meal you have the added benefit of ‘set it and forget it’ and a BAM – a great bowl meal is waiting for you!
Now, when I say ‘set it and forget it’, I mean it with these Lemon Garlic Chicken Thighs and Red Potato Bowls.
Sometimes I’ll head over to Pinterest for some dinner inspiration when I’m feeling uninspired, and some of the amazing slow cooker meals I see require a lot of prep work. To me, that sometimes defeats the purpose of using the slow cooker. Mostly though, I just don’t have the time. I just want a healthy and easy slow cooker meal that I can put together as I’m running out the door, not something I have to spend 30 minutes prepping.
Enter these Slow Cooker Lemon Garlic Chicken Thighs and Red Potato Bowls.
You can have the chicken all seasoned by the time your Keruig is done making your cup of coffee. Seriously. I tried it. It’s true.
The chicken will slowly cook and the garlicky goodness will spread throughout the meal. I even ended up using around 12 cloves of garlic just because some of them were so small that honestly, they don’t count so they’re kinda like freebie garlic cloves.
When you’re ready to eat simply remove the rosemary and thyme sprigs, scoop into a bowl, and you have a flavorful and hearty bowl meal you can share with the famil or enjoy all week!

- 8 chicken thighs
- 10 cloves of garlic, diced
- 1 lemons, sliced into 7 rounds
- 1/3 c. lemon juice
- 1 stick of unsalted butter
- 1 lb. red potatoes, washed and halved
- Garlic Powder
- Dried Basil
- Dried Oregano
- Onion Powder
- Rosemary springs
- Thyme springs
- Layer the red potatoes on the bottom on the slow cooker.
- Season the chicken thighs with salt, pepper, garlic powder, onion powder, basil and oregano, then layer them on top of the potatoes.
- In a bowl, heat the butter until it's melted. Add the minced garlic and lemon juice, then pour on top of the chicken.
- Lie the lemon slices throughout the slow cooker, then add the rosemary and thyme sprigs on top.
- Cook on high for 4-5 hours or until the chicken is cooked through. Enjoy!
