Strawberries, and other fruit, are something I need to have more of in my diet. When I made my Deconstructed Green Smoothie Bowls I mentioned that I have more of a salty tooth than a sweet tooth, and it’s so true.
Of course I love most sweets (except I’m not a big fan of ice cream – I know I know, don’t judge me!), and the two types of sweets that make me weak the knees are anything that has that chocolate/peanut butter combination, and anything with cream cheese.
This weekend is a friend of mine’s birthday and she has a massive sweet tooth, so I wanted to make her something special. Not being a baker/person with a sweet tooth I was at a bit of a loss. Cake, pie, cupcakes – all very acceptable desserts for one’s birthday, but I wondered how I could do something different, and slowly this little idea of strawberry bites came to mind.
The addition of balsamic and basil pays homage to a drink I once had at a now closed ( RIP Zin’s ) local restaurant. They rotated their drink menu on the regular, which is fun, except that I was left forever dreaming about this boozy wonder of glorious fizzy carbonation with balsamic vinegar, fresh basil and muddled strawberries.
I should try and recreate that drink sometime, but for this moment I put all the loveliness of that drink into these little dessert bites.
The cocoa powder was added because my friend loves chocolate, and really, even with a preference for the saltier foods in life, who doesn’t need a little dose of chocolate once and awhile?
These fun strawberry bites are great for potlucks, parties, or when you’re feeling like you need to add a little fancy to your sweatpants and Netflix night.

Serves 3 bites

- 6 large strawberries, halved
- 1/2 c. whipped low-fat cream cheese
- 1/3 c. fresh basil, chopped
- 2 tbsp. balsamic vinegar
- 1 tbsp. cocoa powder
- In a small bowl stir the cocoa powder into the cream cheese.
- Smear a small amount of cream cheese mixture onto each strawberry halve.
- Drizzle the balsamic vinegar over each strawberry.
- Sprinkle with the fresh basil and serve immediately. Enjoy!
If made ahead, leave the balsamic and basil off of the strawberries. Chill the bites and drizzle with the balsamic and basil just before serving.
