Happy Friday! You’ve made it through the week and man oh man do I have an easy, healthy and delicious recipe that you must put on your meal plan for this weekend – Sweet Chili Chicken, Radish & Zucchini Kabobs.
These kabobs literally have only 4 ingredients (if you don’t count the salt and pepper to do some light seasoning), and they come in at a mere 241 per kabob!
I had previously told you guys about the fact that I have so much zucchini, and I have to tell you that my zucchini problem is out-of-control. See, what happened was that Dylan and I didn’t spot three MASSIVE zukes growing in the garden, and when I say massive, I mean three normal size zukes could make up each ONE of the guys I found in my garden. It’s incredible. And a much as we’re out there watering, weeding and picking, I’m genuinely so confused how both of us overlooked these guys.
Couple that with the fact that when I didn’t think our zucchini was growing well (I need to plant some flowers to attract bees to pollenate the zucchini plant), I went and bought five zucchini’s from the grocery store. Oh, and I have one that someone at work brought in from her garden. So yeah, you may be seeing a lot of zucchini recipes coming, but tis the season!
I also have a bit of an obsession with sweet chili sauce. While most people are off making their own stir fry sauces I find it so easy to just add a little sweet chili sauce. I haven’t made too many sauces that I think are better than this sweet chili sauce, and it’s such an easy, low maintenance, healthy sauce you can use in a pinch to save time.
The combination of the grilled chicken, the fresh veggies and sweet chili sauce was, simply put, fantastic. Everything was so fresh and light, and all three ingredients grilled perfectly, at the same pace, so when I took the kabobs off the grill everything was perfectly grilled.

Serves 1 kabob

- 2 chicken breasts, cubed
- 1 large zucchini, sliced and quartered
- 5 radishes, cleaned and cut in half
- 3/4 c. sweet chili sauce
- 1 tbsp. pepper
- 1/2 tbsp. salt
- 4 skewers
- Season each piece of chicken with the salt and pepper.
- On each skewer layer one piece of chicken, one piece of radish, one piece of zucchini, repeat two more times, then cap off the skewer with one last piece of chicken
- Repeat this layering on the other three skewers.
- Brush the sweet chili sauce on the skewers and grill for 10 minutes, or until the chicken is cooked through. Enjoy!
