I’m curious – did you guys go shopping on Black Friday? I’m personally not a Black Friday shopper. Well, I guess maybe I’ve evolved with the times and I¬†definitely perused the online deals with my sweatpants on and big cup of coffee on Friday morning, but no way was I going to stand in lines at the store. Roasted Sweet Potatoes, Arugula, Blue Cheese & Orzo Bowls

Happy Monday, friends! Or should I say, happy meatless Monday? That’s right, I unintentionally made this dish last Monday and it just happened to be meatless Monday. I mean, I had this recipe written out to make, but selfishly, I was craving sweet potatoes. In fact, I’ve moved on from my ridiculous broccoli craving I told you guys about and now I’m going down a deep, dark, sweet potato hole.

I was quite surprised how popular this dish was at home. And I guess when I say ‘popular’ I mean Dylan liked it. We don’t exactly let the pup partake in our dinners, though I’m quite sure she wishes she could, but he was really digging the flavors of this bowl. I know this because he’s usually open-minded and nice about eating what I make, but when he goes out of his way to tell me he liked it, I know it was good.

Spiralized Blue Cheese & Honey Fries

These fries were inspired by a wonderful wine bar called The Wine Room in Winter Park, Florida that we ate on during our trip to Florida and The Bahamas last June.

We had gotten back from The Bahamas and had a little time to kill before we could check into our hotel, so we stopped at this place for some wine. It was fantastic; how it basically works is that you preload what looks like a credit card with however much money you want. Then you can go around to the 100’s of wines and pick your pour – 1 oz., 3 oz., 5 oz., 9 oz., etc. The bigger the pour, the more expensive it is.

Roasted Pork Loin & Blue Cheese Balsamic Glazed Vegetables

Cozy meals are the best, like this roasted pork loin, for example. They make you want to snuggle in on a cold night and read a book or do some good Netflix binging.

The thing about cozy meals though, is that it’s really easy to load up the calories, and quick. Sometimes that’s okay. Sometimes you just need a pan of homemade lasagna and you don’t care about the calories, the carbs, the fat or the sugar’s. I think life is too short to not indulge once and a while, but for me, I have to watch the indulging. It goes straight to my waistline.
