Sometimes, you just need a great slow cooker go-to meal. Something you can throw together quickly on those busy days and have ready for you when you’re done running around and you’re ready to eat. Or hell, sometimes you just don’t feel like cooking. And that’s okay. Because that’s where an awesome slow cooker meal, like these Lemon Garlic Chicken Thighs and Red Potato Bowls come in.
Bowl meals are versatile for so many reasons. They’re convenient, you end up eating less, you can mix and match ingredients and flavors easily, and fun fact – a bowl meal can double as a side dish saving you extra cooking for another meal!
Happy 2017! I’m FINALLY back with a new recipe and I shared my 2017 goals with you last Friday, but I didn’t really explain my mysterious disappearance over the last few weeks of the year (unless you followed my IG!). Okay okay, so “mysterious” is probably a bit of an embellishment. It’s making me sound way cooler than I am; as if I went on some exotic vacation or adventure, when I didn’t.
Congratulations! You survived turkey day, Black Friday, and Cyber Monday – phew! I hope you’re lucky enough to have all of your holiday shopping completed – I sure don’t. I vowed that I wouldn’t online shop for myself this year, but it’s just so hard when there are so many good deals and you’ve been eying something! Why not get what you’ve been wanting on sale?! I suppose it’s more of those ‘oh well look at that, I didn’t even know I wanted that‘ impulse purchae that get people (read: ME!) in trouble than buying the item I’ve been wanting on sale.
I swear I walk a fine line between wanting to minimalize and impulsively online shopping. I think I always have a donation box going at my house, and honestly I don’t have that much more to donate at this point. I’m not into chotskey’s and clutter. I’m super picky about my art. I take FOR-EV-ER to pick out a new piece of furniture. But sake’s alive I won’t think twice about a new cookbook, cozy cute blanket, or updated wine glasses (stems or no-stems – I CAN’T DECIDE!).
Holy crap, tomorrow is Thanksgiving! I told you guys about my Thanksgiving tradition but I do have to confess my tree is already up. I KNOW! I’m officially that person that put their tree up before Thanksgiving. But you know, I just sort of figured that if the Cubs could win the World Series, Donald Trump could become President and I could go to a pizza place and only order a salad (yep, for real, that happened last week!), well, to hell with it. I could put up my Christmas tree and it just wouldn’t be the strangest thing that’s happened over the last month.
In my defense, I put it up last weekend, so technically there was less than a week until Turkey Day. The truth is that I bought the most adorable new ivory faux fur holiday tree skirt and I couldn’t wait to use it. Further signs I’m firmly approaching 34 in just over a month – new holiday tree skirts are my jam.
Happy Sunday, friends! Can you believe we’re only a few weeks from Thanksgiving?! I’ve been exercising my willpower for the better part of the week over here because I found roundtrip flights out of Chicago to Italy for $300-$400 dollars. That is a STEAL! And I love Italy. And travel. And Italian food. And the people. I fell in love the country the first time I was there and have been itching to go back.
But, we have been vacationing like crazy and have to build our vacation time back up, plus we’re going to Ireland in May (I’m going to my first food and wine conference!) and we’ve been toying with the idea of making a life change that may require some travel in the winter months, so, unless Santa wants to buy me an all-expenses paid trip to Italy (are you listening Santa?!?) I think we have to table this crazy good deal.
This week marks two months since I’ve started my How To Tuesday’s! I can’t believe it’s been that long since I’ve started bringing you guys different tips, tricks and techniques for cooking.
