Bowl meals are versatile for so many reasons. They’re convenient, you end up eating less, you can mix and match ingredients and flavors easily, and fun fact – a bowl meal can double as a side dish saving you extra cooking for another meal!
Happy 2017! I’m FINALLY back with a new recipe and I shared my 2017 goals with you last Friday, but I didn’t really explain my mysterious disappearance over the last few weeks of the year (unless you followed my IG!). Okay okay, so “mysterious” is probably a bit of an embellishment. It’s making me sound way cooler than I am; as if I went on some exotic vacation or adventure, when I didn’t.
Well, it’s been a long time coming, but I finally made my first ramen bowl! I’ve had this on my to-do list for awhile now, but my cravings seem to switch at the drop of a hat. I can need chili one moment, then an hour later I’ll see an ad for a burger and suddenly the chili is a distant memory.
You guys. I’m bringing you a super duper easy meal. Like ‘oh my gosh I ate too much food at Thanksgiving and DO NOT feel like cooking‘ meal. And bonus – it can be made in 30 minutes of less!
I’m curious – did you guys go shopping on Black Friday? I’m personally not a Black Friday shopper. Well, I guess maybe I’ve evolved with the times and I definitely perused the online deals with my sweatpants on and big cup of coffee on Friday morning, but no way was I going to stand in lines at the store. I know some folks love it, and that’s great, but it’s definitely not for me.
Holy crap, tomorrow is Thanksgiving! I told you guys about my Thanksgiving tradition but I do have to confess my tree is already up. I KNOW! I’m officially that person that put their tree up before Thanksgiving. But you know, I just sort of figured that if the Cubs could win the World Series, Donald Trump could become President and I could go to a pizza place and only order a salad (yep, for real, that happened last week!), well, to hell with it. I could put up my Christmas tree and it just wouldn’t be the strangest thing that’s happened over the last month.
In my defense, I put it up last weekend, so technically there was less than a week until Turkey Day. The truth is that I bought the most adorable new ivory faux fur holiday tree skirt and I couldn’t wait to use it. Further signs I’m firmly approaching 34 in just over a month – new holiday tree skirts are my jam.
Happy Monday, friends! Or should I say, happy meatless Monday? That’s right, I unintentionally made this dish last Monday and it just happened to be meatless Monday. I mean, I had this recipe written out to make, but selfishly, I was craving sweet potatoes. In fact, I’ve moved on from my ridiculous broccoli craving I told you guys about and now I’m going down a deep, dark, sweet potato hole.
I was quite surprised how popular this dish was at home. And I guess when I say ‘popular’ I mean Dylan liked it. We don’t exactly let the pup partake in our dinners, though I’m quite sure she wishes she could, but he was really digging the flavors of this bowl. I know this because he’s usually open-minded and nice about eating what I make, but when he goes out of his way to tell me he liked it, I know it was good.
