Sometimes, you just need a great slow cooker go-to meal. Something you can throw together quickly on those busy days and have ready for you when you’re done running around and you’re ready to eat. Or hell, sometimes you just don’t feel like cooking. And that’s okay. Because that’s where an awesome slow cooker meal, like these Lemon Garlic Chicken Thighs and Red Potato Bowls come in.
Happy Sunday, friends! Can you believe we’re only a few weeks from Thanksgiving?! I’ve been exercising my willpower for the better part of the week over here because I found roundtrip flights out of Chicago to Italy for $300-$400 dollars. That is a STEAL! And I love Italy. And travel. And Italian food. And the people. I fell in love the country the first time I was there and have been itching to go back.
But, we have been vacationing like crazy and have to build our vacation time back up, plus we’re going to Ireland in May (I’m going to my first food and wine conference!) and we’ve been toying with the idea of making a life change that may require some travel in the winter months, so, unless Santa wants to buy me an all-expenses paid trip to Italy (are you listening Santa?!?) I think we have to table this crazy good deal.
I try not to eat a lot of potatoes. I love them, but unless you’re roasting some sweet potatoes with a light seasoning, potatoes can get really carby, really fast. Is ‘carby’ even a word? I’m saving it in my dictionary, irregardless, so it’s a word now. Anyway, I try really hard to not eat french fries or mashed potatoes except on the occasional splurge, but sometimes a girl just needs some potatoes. And I adore red potatoes. That’s right, adore. You can get a few small potatoes and make yourself a portion that is small enough to hit your craving and not so much that you’re left uncomfortable. And crispy potatoes are THE BEST. It’s same reason I can’t stand ‘steak fries’; too much potato and not enough crunch.
Tuesday! We’re making it through the week, folks, and I am still on my “fall foods” kick. My better half and I keep going back and forth with being sick. I started with a sore throat a week ago and that moved into a cold/cough. I thought I’d kicked it but it came back around this weekend. And just as I was getting better yesterday, he caught everything I had and is now miserable. BUT despite it all, we both have kept our appetite’s. To be honest, if I don’t have an appetite then you know that I am really down for the count. A little cold and congestion generally won’t stop me from eating.
I’m sick. I have this lovely head/throat/chest congestion thing going on. I’ve been holding it at bay for around a week, and when I woke up yesterday it had reared its ugly head! Not very fun, but thankfully I have had this soup on my to-do list for this week, so it appears that the stars had aligned and my menu was matching up with my health!
I recently made some fantastic Parmesan & Garlic Asparagus Fries, and was craving something similar again as an easy side to my steak. In addition, I’ve been wanting to mix up my spiralizing, and realized that I’d never spiralized a potato before so that would be a fun and easy side for my steak!
