I’m going to let you in on one of the greatest grocery store secrets of all time…
You guys. 34 is officially here and I’m DETERMINED to make this my year! I’ve mentioned before how I felt all over the page turning 33, and even though the beginning of 2017 wasn’t the kindest to us, I just have the most positive mindset.
I can’t believe it, but I did my first ‘meatless Monday’ last week for dinner. In hindsight, I realized I had had chicken noodle soup for lunch, so I can only say I participated for dinner, but still! I’m a complete carnivore who would have laughed hysterically if you would have asked me 5 years ago if I would be eating vegetarian for a meal.
Oh how the times have changed. I’m definitely not vegetarian and don’t think – wait, I know – I’ll never be one. But my love an appreciation of vegetarian meals has certainly increased.
Quinoa. If you like eating healthy and are into brown rice, then quinoa should definitely be your jam! We’re talking skill level = Minute Rice. It’s so easy and a great side you can cook and throw together for your meal.
I personally use Bob’s Red Mill products and love them. Their quinoa is my go-to, along with all their flours and sugars. But regardless of what brand of quinoa you buy, how you cook it will remain the same.
Another Sunday, another slow cooker recipe. It’s just SO EASY to use a slow cooker, and doing so this Sunday was fantastic because it allowed me to use the day to meal prep healthy ingredients for the upcoming week, as well as take the time to go through my kitchen; I was very lucky and received a number new saucepans, pots and skillets for Christmas, so it was a perfect opportunity for me to get rid of some tired, old things and make room for the new. So while I did all of that, my delicious dinner was cooking away, with zero hands-on maintenance.
Happy Tuesday friends! I hope your week started off well. I had pretty healthy weekend of eating, and had a really fun girls night participating in a gingerbread house building competition with some of my favorite friends. I didn’t get much cooking done this weekend, but I planned accordingly and was ready to tackle a week of healthy eating.
