There’s a lot of awesomeness going on in the name of this recipe. It’s almost sounds too good to be true: low carb – check! Pizza – check! Lasagna – check! Bowl meal – check! It’s even really healthy but I thought adding the word ‘Healthy’ to the title would probably push this recipe title over the already blurred edge.
So I’m pretty excited to say that I reached the 10 pound weightloss mark! Now, I have a long ways to go in this journey. Right now my focus is on losing weight, then I’ll switch my focus to getting stronger, but I have to say it was great to step on the scale and see double digits!
But, it hasn’t been that easy…
Happy Tuesday friends! How was your weekend? Ours was b-u-s-y! Well, mine was. I have a sick fella at home so his weekend was filled with lots of DayQuil, NyQuil and couch time. I, on the other hand, went the opposite direction.
Trying to get the house updated is a lot. I feel as though I’ve been to Menards and Home Depot more times than I can count, and that’s only to update the bathroom. Which I still need to touch up the paint on but I keep putting it off because, well, it’s painting.
Happy Sunday, friends! Can you believe we’re only a few weeks from Thanksgiving?! I’ve been exercising my willpower for the better part of the week over here because I found roundtrip flights out of Chicago to Italy for $300-$400 dollars. That is a STEAL! And I love Italy. And travel. And Italian food. And the people. I fell in love the country the first time I was there and have been itching to go back.
But, we have been vacationing like crazy and have to build our vacation time back up, plus we’re going to Ireland in May (I’m going to my first food and wine conference!) and we’ve been toying with the idea of making a life change that may require some travel in the winter months, so, unless Santa wants to buy me an all-expenses paid trip to Italy (are you listening Santa?!?) I think we have to table this crazy good deal.
Fall may be in the air but there isn’t snow on the ground yet (at least not in most places!), so it’s still the perfect time to make a Hawaiian-inspired bowl to make you feel like you’re lounging on the beach instead of breaking out the cozy sweaters and jackets.
I wanted to combine that pork and pineapple flavor – the savory and sweet – in a refreshing way, and this bowl was the perfect recipe for that.

I have been dying to make these tacos ever since I found them on Pinterest. This recipe is from Erin over at Well Plated, and it’s not often that I see a vegetarian recipe and think “yes, I HAVE to have that in my life”, but that’s exactly what happened.
I’ll admit I’m a bit of sucker for a recipe with corn in it, and with zucchini season coming to a close the idea that I could still get some more recipes cooked with one of my favorite vegetables definitely appealed to me.
